White Chocolate Eggnog Pudding

Eggnog season ... one of the best times of the year! Sipping it from miniature crystal cups by the twinkling light of the Christmas tree is a treasured tradition, but you can utilize eggnog for so much more! Take a break from all of the holiday cookies and try our White Chocolate Eggnog Pudding. It's elegant and understated, but the seasonal flavor profile will leave a lasting impression. Over medium heat, whisk together sugar, white chocolate powder, cornstarch and flour. Add Smith's Eggnog and heat until thickened. Simmer, stirring constantly, and sing some Christmas carols while you enjoy the incredible aroma. Remove from heat and stir in some butter, then divide into some decorative custard cups. You can chill out while your White Chocolate Eggnog Pudding is chilling, then right before serving, garnish with pomegranate arils. (They are conveniently sold in cups in your fresh produce section if you don't want to fuss with the whole fruit.) Creamy, chocolatey and filled with the tastes of the season, White Chocolate Eggnog Pudding will become a cherished part of your holiday celebrations.

How to Make

INGREDIENTS

  • 1/2 cup sugar
  • 1/3 cup white chocolate powder
  • 3 tbsp cornstarch
  • 1 tsp flour
  • 2 cups Smith's low fat eggnog
  • 2 tbsp butter
  • 4 tbsp pomegranate arils

DIRECTIONS

  1. In a heavy medium saucepan, mix sugar, chocolate powder, cornstarch and flour. Add 1 cup Smith's eggnog to dissolve cornstarch. Whisk in remaining eggnog.
  2. Whisk mixture over medium heat until thickened and let simmer about 5-6 minutes, stirring constantly.
  3. Remove from heat. Stir in butter.
  4. Divide pudding among 4 custard cups.
  5. Chill until cold, about 2 hours.
  6. Before serving, sprinkle with pomegranate arils.
