How to Make

INGREDIENTS

Crust
24 graham crackers
1/3 cup sugar
1/2 cup butter

Filling, Step 1 
2 eggs, beaten
3/4 cup sugar
8 oz. Cream cheese

Filling, Step 2
2 cups pumpkin
3 egg yolks
1/2 cup sugar
1/2 cup Smith's milk
1/2 tsp. Salt
1 tbsp. Cinnamon
1 envelope plain gelatin
1/4 cup cold water

Filling, Step 3
3 egg whites
1/4 cup sugar

Whipped cream, to taste

DIRECTIONS

  1. Make crust.
  2. Mix graham crackers, sugar and butter, and press into 9 x 13 in. pan.
  3. Make filling (step 1). 
  4. Mix eggs, 3/4 cup sugar and cream cheese, and pour over crust.
  5. Bake 20 minutes at 350°F.
  6. Make filling (step 2). 
  7. Cook pumpkin, egg yolks, 1/2 cup sugar, SMITH's milk, salt and cinnamon until mixture thickens.
  8. Remove from heat and add gelatin, dissolved in cold water.
  9. Cool.
  10. Make filling (step 3). 
  11. Beat egg whites, 1/4 cup sugar and fold in pumpkin mixture.
  12. Pour over cooled crust.
  13. Top with whipped cream.
