Pumpkin Eggnog Spice Crumb Cake

How to Make

INGREDIENTS

Cake:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 15 oz pumpkin puree
  • 1 cup Smith's eggnog
  • 2 cups flour
  • 2-1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg

 

Crumb Topping:

  • 2 sticks butter, softened
  • 3/4 cup white sugar
  • 2 cups flour
  • 2 tsp vanilla extract
  • 2 tsp cinnamon

DIRECTIONS

  1. Preheat oven to 350 F.
  2. Spray a 9" x 13" baking dish with cooking spray.
  3. In a large bowl, mix the butter, sugar, eggs, pumpkin, and Smith's eggnog until well combined.
  4. Mix in the flour, baking powder, salt, pumpkin pie spice, and nutmeg. Mix well and spread evenly into pan.
  5. Bake cake for about 20 minutes, remove from oven. Set aside.
  6. Meanwhile, in a separate bowl make the crumb mixture by adding the butter, sugar, flour, vanilla, and cinnamon. Mix with a fork until large crumbs form. Spread on top of the cake batter evenly.
  7. Bake for about 20 more minutes, or until center is set.
