Poppy Seed Eggnog Pancakes

How to Make

INGREDIENTS

  • 2 cups flour
  • 2 eggs
  • 4 tsp baking powder
  • 1-1/2 cups Smith's eggnog
  • 1/2 tsp salt
  • 2 tbsp butter or margarine, melted
  • 1/4 tsp ground nutmeg
  • 1 tsp poppy seeds, if desired

DIRECTIONS

  1. In a bowl, combine the flour, baking powder, salt, nutmeg and poppy seeds, if desired.
  2. In another bowl, beat eggs, Smith's eggnog and butter; stir into dry ingredients until moistened.
  3. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle.
  4. Turn when bubbles form on top; cook until second side is golden brown.
