Perfect Potato Soup

Warm your belly and your soul with the most Perfect Potato Soup. It's the kind of soup that makes you close your eyes and and sigh with pure contentment. It isn't health food, of course, but take some comfort in the fact that potatoes are a good source of vitamin C, B6 and potassium! Going back to the idea that our Perfect Potato Soup isn't health food, fry up some bacon to start things off right, then sauté the chopped onion with it for a few minutes. It already smells perfect! Next add the cubed potatoes and water, and simmer until the potatoes are nice and tender. Stir in some cream of chicken soup and Smith's Sour Cream, then gradually pour in the goodness of Smith's Milk. Season and add a bit of parsley, then heat to temperature – taking care not to boil. Ladle up a bowl of Perfect Potato Soup, serve with some crusty bread and prepare to smile all the way through dinner.

How to Make

INGREDIENTS

  • 8 slices of bacon, cut up
  • 1 cup chopped onions
  • 2 cups cubed potatoes
  • 1 cup water
  • 1 can cream of chicken soup
  • 1 cup Smith's sour cream
  • 1-3/4 cup Smith's milk
  • 1 tbsp parsley
  • 1/2 tsp salt
  • Dash of pepper

DIRECTIONS

  1. Fry bacon until crisp in 3-quart saucepan.
  2. Add onion and saute 2-3 minutes. Pour off fat.
  3. Add potatoes and water. Bring to a boil, cover and simmer 10 to 15 minutes until potatoes are tender.
  4. Stir in cream of chicken soup, Smith's sour cream and gradually add in Smith's milk.
  5. Add salt, pepper and parsley.
  6. Heat to serving temperature (DO NOT BOIL).
