Most Amazing Cinnamon Rolls

These cinnamon rolls from scratch truly are the most amazing. They are soft, fluffy, and make for a delicious and filling breakfast. With a cinnamon swirl filling, your whole family will enjoy these. Top the cinnamon rolls with the cream cheese icing and enjoy!

How to Make

INGREDIENTS

DOUGH:

¾ CUP SMITH’S MILK

¼ TSP ACTIVE YEAST

¼ CUP RAW SUGAR (OR GRANULATED SUGAR)

2 TSP VANILLA (MEXICAN VANILLA WORKS BEST)

1 WHOLE EGG PLUS 1 EGG YOLK

¼ CUP BUTTER

3 CUPS SIFTED FLOUR

¾ TSP SALT

FILLING:

½ CUP BUTTER, SOFTENED

2-3 TBSP CINNAMON FOR DUSTING

1 CUP BROWN SUGAR (LIGHT OR DARK)

FROSTING:

8OZ. CREAM CHEESE, SOFTENED

¼ CUP BUTTER, SOFTENED

1 TSP VANILLA

½ CUP POWDERED SUGAR (MORE OR LESS TO TASTE)

2 TBSP SMITH’S HEAVY CREAM

DIRECTIONS

  1. HEAT MILK IN MICROWAVE OR STOVETOP UNTIL BOILING THEN LET COOL FOR ABOUT 10 MINUTES.
  2. ADD BUTTER, SUGAR, VANILLA, AND WHISK UNTIL BUTTER MELTS.
  3. ONCE THE TEMPERATURE IS ABOUT 120°F, ADD THE EGG AND YOLK AND WHISK WELL, THIS WILL BRING THE TEMPERATURE DOWN TO ABOUT 110°F.
  4. IN A LARGE MIXING BOWL, MIX YEAST AND MILK MIXTURE, AND LET YEAST BLOOM FOR ABOUT 5 MINUTES.
  5. ONCE YEAST IS FROTHY-LOOKING, ADD FLOUR AND SALT AND STIR UNTIL COMBINED (A STAND MIXER WORKS BEST).
  6. MIX/KNEAD FOR ABOUT 5-8 MINUTES UNTIL DOUGH IS NO LONGER STICKY, BUT HOLDS TOGETHER.
  7. TRANSFER TO A BUTTER GREASED BOWL AND COVER WITH A TOWEL OR PLASTIC WRAP AND SIT IN A SLIGHTLY WARM AREA FOR ABOUT 1 HOUR UNTIL DOUBLE IN SIZE (I LIKE TO TURN THE OVEN ON LOW AND SET THE DOUGH BOWL COVERED ON THE COUNTER BESIDE THE OVEN).
  8. ONCE DOUGH HAS RISEN, LIGHTLY DUST COUNTER WITH FLOUR AND PUT DOUGH ONTO SURFACE, ROLL OUT TO ABOUT ½ INCH THICKNESS.
  9. SPREAD SOFTENED BUTTER OVER DOUGH THEN SPRINKLE CINNAMON AND BROWN SUGAR.
  10. I LIKE TO USE A PIZZA CUTTER TO CUT STRIPS SO THE CINNAMON ROLLS WILL BE UNIFORM AND EASY TO ROLL.
  11. PLACE ROLLED CINNAMON ROLLS IN YOUR BAKING DISH OF CHOICE LINED WITH PARCHMENT PAPER AND LET RISE FOR ABOUT 15-20 MINUTES. **DO NOT PLACE THEM TOO CLOSELY TO EACH OTHER OR THEY WON’T RISE PROPERLY.
  12. BAKE FOR ABOUT 15-20 MINUTES UNTIL BROWNED AND RISEN IN THE MIDDLE.
  13. WHILE BAKING, MIX THE CREAM CHEESE AND BUTTER TOGETHER UNTIL CREAMY.
  14. ADD VANILLA, HEAVY CREAM AND POWDER SUGAR AND MIX UNTIL CREAMY.
  15. ONCE CINNAMON ROLLS HAVE COOLED, ADD CREAM CHEESE ICING AND ENJOY, BUT PREPARE TO GET ANOTHER!!
