Mom's Cinnamon Coffee Cake

Cinnamon is one of our favorite spices because it's invigorating and heartwarming at the same time. It brings back memories of childhood breakfasts around the family table — eating Mom's Cinnamon Coffee Cake warm from the oven. This recipe is ideal for a weekend brunch or Friday breakfast club at work, but we wouldn't even mind having it for dessert after a weeknight dinner! The great thing about Mom's Cinnamon Coffee Cake is that it's bursting with flavor but is so easy to make. You simply have to cream the butter and sugar and add the egg, then alternate adding the dry ingredients with the Smith's Buttermilk and baking soda. Mix up the delicious streusel crumb topping and layer that in the pan with the batter. It takes just 30 minutes to bake, then you're ready to share the joy of Mom's Cinnamon Coffee Cake with your family and friends — any time of the day or night!

How to Make

INGREDIENTS

  • 1 cup granulated sugar
  • 1/2 cup butter or margarine
  • 1 egg
  • 1 cup Smith's buttermilk
  • 2 cups sifted flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Crumbs for topping:
  • 1 cup packed brown sugar
  • 2 tbsp flour
  • 3 tbsp melted butter
  • 1 tsp cinnamon

DIRECTIONS

  1. Cream butter and sugar, then add egg. Add the dry ingredients alternately with Smith's buttermilk and soda.
  2. Pour half of batter into greased pan and sprinkle with half of crumbs. Then put remaining batter on top and top with remaining crumbs.
  3. Bake in 8" x 12" pan in 350 F oven for 30 min or longer.
  4. Crumbs for Topping: Mix together
