Double Cheese Mashed Potatoes

Mashed Potatoes are the way to many a heart, but add cheese to them and that heart will be yours forever! Our Double Cheese Mashed Potato Recipe will quickly become a family favorite on those homestyle, meat-and-potatoes nights. After peeling, dicing, cooking and mashing your potatoes, add shredded Mexican cheese blend, green onion, butter and seasonings. But wait ... we said double cheese! You might be surprised that Smith's Cottage Cheese is the second part of our recipe's name! This, in addition to Smith's Sour Cream, will make your Double Cheese Mashed Potatoes so rich and creamy that you might be tempted to make an entire meal out of just this side dish! Before you start eating right from the mixing bowl, blend everything together and pour into a casserole dish, then bake for 20-25 minutes until just golden. If Double Cheese Mashed Potatoes = love, your family will never doubt how much you care!

How to Make



  1. Peel, dice and wash the potatoes. Cook the potato cubes in boiling water until tender; drain.
  2. In a large bowl, mash the potatoes. Add the remaining ingredients and blend well.
  3. Spray a 3-quart casserole or 9" x 13" baking dish with non-stick spray.
  4. Pour the potatoes into the casserole dish and bake at 350 F for 20 to 25 minutes or until top starts to brown slightly.
