Creamy Crab Bisque

Creamy Crab Bisque sounds very elegant and seems well-suited for the first course of a fancy dinner. But it's also a simple and satisfying meal for a chilly evening at home in front of a cozy fire. To make it, melt butter in a non-stick pot, then add flour, salt and pepper, and stir until the mixture thickens. Add tomato paste, then chicken stock, and continue heating. Whisk in the Smith's Heavy Whipping Cream and Sherry, and bring to full heat. Don't stress about the crab meat for this Creamy Crab Bisque. If you live near an amazing fish market, by all means go for fresh. But there's nothing wrong with frozen or canned crab meat in a pinch. It will still taste exquisite when enrobed in the rich bisque powered by Smith's. After you've added the crab meat to the pot, let it simmer for 10-15 minutes. Enjoy your Creamy Crab Bisque with warm bread for dipping.

How to Make


  • 1/2 cup butter
  • 1/2 cup flour
  • 14 oz chicken stock
  • 2 tbsp tomato paste
  • 2 cups Smith's heavy whipping cream
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3/4 cup sherry or marsala wine (optional)
  • 1 lb crab meat


  1. Melt butter in a medium-sized pot (non-stick). Add flour, salt and pepper. Allow flour to melt into the butter and stir constantly until thick consistency. Combine mixture with tomato paste.
  2. Slowly whisk in the chicken stock and cook to a moderate heat.
  3. Stir in the Smith's heavy whipping cream, whisking constantly.
  4. Add sherry (optional) and bring to full heat.
  5. Add crab meat and simmer for 10 to 15 minutes.
