Cheesecake Bars

Cheesecake Bars are a mouthwatering way to get the rich and creamy taste you love in a dessert -- without all of the work. Plus, they are much more portable! To make the crust, combine a package of sugar cookie mix with a little bit of water until it comes together, then press into a 9" x 9" pan. (Reserve 1 cup of these delightful crumbs for the topping.) Bake until lightly browned. The best part of these Cheesecake Bars happens when you blend the softened cream cheese together with sugar, Smith's Milk, egg, lemon juice and vanilla. Sprinkle the reserved crumbs evenly over the top and pop in the oven for another 25 minutes. When they are cooled completely, you're ready to cut into scrumptious individual servings. Cheesecake Bars are a perfect pick-me-up after a light lunch, shared with friends over coffee at book club or donated to your local charity bake sale. 

How to Make

INGREDIENTS

  • 1 package Duncan Hines golden sugar cookie mix
  • 1 tbsp water
  • 1/2 cup granulated sugar
  • 2 tbsp Smith's milk
  • 1/2 tsp vanilla
  • 8-oz package cream cheese, softened
  • 1 egg
  • 1 tbsp lemon juice

DIRECTIONS

  1. Preheat oven to 350 F.
  2. Empty contents of the dry sugar cookie mix and flavor packet in a bowl. Add 1 tbsp of water. Mix with fork until thoroughly blended. Save 1 cup of crumbs for topping.
  3. Press remaining crumb mixture into an un-greased 9" x 9" x 2" pan.
  4. Bake 12 to 15 minutes until lightly browned.
  5. Blend together, softened cream cheese and sugar. Beat in egg, Smith's milk, lemon juice and vanilla. Beat until creamy.
  6. Pour over baked layer. Sprinkle with reserved crumbs.
  7. Return to oven and bake 25 minutes longer.
  8. Cool completely and cut into bars.
  9. Keep refrigerated.
