Crab Bisque

How to Make


  • 1/2 cup butter
  • 1/2 cup flour
  • 14 oz. chicken stock
  • 2 tbsp. tomato paste
  • 2 cups Smith's heavy whipping cream
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 cup sherry or marsala wine (optional)
  • 1 lb. crab meat


  1. Melt butter in a medium-sized pot (non-stick). Add flour, salt and pepper. Allow flour to melt into the butter and stir constantly until thick consistency. Combine mixture with tomato paste.
  2. Slowly whisk in the chicken stock and cook to a moderate heat.
  3. Stir in the Smith's heavy whipping cream, whisking constantly.
  4. Add sherry (optional) and bring to full heat.
  5. Add crab meat and simmer for 10 to 15 minutes.
